Western Australian lamb ‘Schnitzel’ -pressed lamb shanks with seared sweetbreads, globe artichokes and roast garlic

Glazed Wagyu Daube - malted pomme puree, honey roasted roots and Arabica jus

Blue-eye Trevalla - ragout of chorizo, kalamata olives and baby octopus

Slow cooked Byron bay pork tenderloin -
crushed kipflers and thyme, apple and vanilla puree, crackling and cider jus

Roasted corn fed chicken breast - sage and caramelized onion farce and gnocchi a la francaise

Grainge’ Black angus 300g Scotch fillet - 150-day grain fed, with thyme mash, bone marrow croquette and bordelaise sauce

Risotto of forest mushrooms - red wine poached duck egg, asparagus and truffle pecorino
